With the hustle and bustle of the morning and getting into a routine of life sometimes, we just need a quick breakfast that’s going to fill our stomachs. These raisin bran muffins are delicious and ready for that quick snack or breakfast.
These muffins are one of my grandma’s recipes that I found in her kitchen when we cleaned out her home. These are a huge hit and are defiantly a memory for us.

Ingredients you will need
- Bran cereal – Bran has many benefits for your overall health including, heart health, reducing bloating, added fiber, and supports good gut health, among other things.
- Milk- added to soak the bran and soften the cereal. This can for sure be substituted with any dairy free alternative.
- Vegetable oil – adds moisture to the muffin
- Egg – binds all the ingredients together
- Vanilla – adds flavor
- Sugar – brings some sweetness to the recipe
- Flour – is the base of the muffin itself
- Baking powder – helps the muffin to rise
- Baking soda – helps the muffin to rise.
- Salt – brings out the flavor of all the other ingredients.
- Raisins – these are optional and help to add some sweetness and break up the tecture of the muffin.
You can add any other filing you would like to these muffins including nuts, cranberries, or even chocolate chips for a different experience.
How to make Raisin Bran Muffins
1. pre-heat oven
pre heat oven to 350°f. always allow your oven to pre heat. if you place your muffins in the oven before it has reached the desired temperature it will affect the way the muffins bake.
2. Soak you bran
In a medium bowl add bran cereal and milk then allow to soak for 10 minutes. bran cereal can be a bit rough, taking this step to soak it will help the bran cereal break down easier in the recipe.
3. Combine wet ingredients
Add oil, egg, vanilla, and sugar. whisk it all together breaking the egg and fully incorporating all the ingredients. make sure to fully mix at this stage.
4. Add dry ingredients
Add your dry ingredients, flour, baking soda, baking powder, and salt.
Mix all the ingredients together but do not over-mix. Pay close attention and be sure not to over combine. As soon as as you don’t see any dry ingredients in the bowl stop mixing. Over mixing your batter will result in a dense gummy textured muffin.
This is why I always hand mix my muffins, it makes it easier to control the amount of mixing you are doing.
5. Fold in Raisins
fold in the raisins, folding is a process of scraping edge of the bowl and bring the batter from the outside to the middle. Turn the bowl and continue. Only do this enough times to distribute the raisins and no more.
6. Divide the Batter
Line a muffin tray with 12 paper liners and divide the batter evenly between them. use festive or basic liners, have some fun with them.
7. Bake
bake for 20 minutes or until a toothpick comes out clean
8. Bake
allow to cool

- 1 12 cup muffin pan
- 12 Muffin liners
- 1 set measuring spoons
- 1 set measuring cups
- 1 Bowl
- 1 whisk
- 1 rubber spatula
Ingredients
- 1 cup bran cereal
- 1 cup milk
- 6 tbsp vegetable oil
- 1 large egg
- 1 tsp vanilla
- ½ cup sugar
- 1½ cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup raisins
Instructions
