Grandmas Date Squares

These Date squares are not only easy to make but are super delicious and packed full with delicious flavor.

Date squares were something I remembered as a kid my grandma would make all the time. if I’m being completely honest back then I was apprehensive about trying them. the name “date” sounded “healthy”. Which of course was something I wanted nothing to do with myself. Once I tried them my mind was immediately changed. The outer layers were sweet and crunchy and the center had almost a caramel type consistency and flavor. I was hooked.

When I found my Grandmas cook book a few years back I was excited to see that recipe was in there. Now I’m so very excited to be sharing it with you.

Ingredients you will need

  • All purpose flour
  • Rolled oats – any oats will work but will change the texture a bit
  • Brown sugar – gives a sweet molasse flavor
  • Butter – This will make sure your bars are filled with great flavor and texture.
  • Salt -Brings out the flavor of the bars.
  • Pitted Dates – These are the star.
  • Water
  • Lemon juice

How to make Grandmas Date Squares

  1. In large bowl add flour, rolled oats, brown sugar, and salt.
  2. Melt butted and add to the flour mixture, stir with a wooden spoon. mixture should look dry but ball together easily.
  3. set aside.
  4. In a medium sized saucepan add dates, add just enough water to cover dates. Add lemon juice.
  5. Over medium heat bring dates to a rolling boil, stir continuously for 5 min. dates should be tender and squish easily when poked with spoon. boil longer if needed.
  6. Remove from heat and transfer pot to heat protective mat on the counter.
  7. With hand held beater blend mixture until you are left with a creamy caramel like texture.
  8. pre heat over to 375°f
  9. prepare baking pan with spray oil and line with parchment paper. paper should exceed the sides of the pan to make it easier to grab and lift out when ready to serve.
  10. Divide flour mixture and pack 1 half into bottom of 9×9 pan pressing down with the back of a spoon.
  11. Layer date mixture on top evenly spread over the entire pan.
  12. Sprinkle remaining half of the flour mixture on top to cover date mixture.
  13. Bake in over for 20 min. Top should have a slight golden brown color when complete.
  14. Allow to cool completely before removing from pan and slicing into desired size squares.

Tips

  • If you are using a non-stick saucepan for boiling the dates be sure to remove them from the pan before beating them with an electric beater. the beater will remove the coating of your pan. 
  • Bars should cool completely in pan before trying to cut. Once mine were cooled off completely in the pan I covered and put in the fridge over night. If you want to enjoy them today I would let them cool in the fridge for at least 1 hour.
