2 Ingredient Pasta

I have made this 2 ingredient pasta a few times now and I have to say, it is so much easier than you might think to make fresh delicious pasta at home.

2 ingredient pasta

Make this pasta next time your need some noodles in you dinner, make any shape you want once you have it rolled out and ready to go.

Ingredients you will need to make 2 ingredient pasta

  • Eggs – I use the whole egg for my recipe, some people use only egg yolks, I have not yet tried this so stay tuned for that recipe to come.
  • Flour – I use all purpose flour of course that is what I have on hand most of the time in my house. Some people recommend using semolina flour.

How to make 2 ingredient pasta

1. Measure your flour hill

On a clean dry surface measure out your four and form a hill on your counter top

2. Make a well

using the back of the measuring cup or your hands crate a well in the pile big enough to hold all 5 eggs

3. Add eggs

crack eggs one at a time into a separate bowl then add into the well.

4. Begin mixing the eggs

using a fork break all the egg yolks

begin whisking the eggs being careful not to break through the flour walls.

continue to mix the eggs slowly incorporating the flour until it begins to make a paste and will no longer run all over the counter if you wee to break through the walls

5. add rest of flour

use a bread scrapper to bring the flour from the outside to cover the egg mixture and use a chopping action to combine slightly

6. Kneed till smooth

use your hands to start bringing everything together, the dough will start off crumbly and dry but keep kneading and it will all come together

kneed until everything is combined and the ball of dough is smooth

7. Allow to rest

wrap tightly with plastic wrap and let sit for 30 min

I didn’t have any plastic wrap so I used a bread bag, Just make sure its air tight

8. Roll and shape noodles

Making the Noodles for 2 ingredient pasta

divide the dough into 4 pieces

make sure the dough you are not working with stays wrapped up.

using a rolling pin or pasta roller roll the dough out as thinly as desired

if you are using a pasta roller you can put the thin dough through the cutting portion right away if you are cutting my hand allow the rolled dough to dry for 15-20 minutes before cutting.

hand cut pasta to dry or boil right away in salted water. 3-5 minutes until al dente. fresh pasta takes less time to cook than the cry packaged kind so keep an eye on it and do your taste test frequently.
