If you wanted to you could for sure add some lemon instead of the lime. the only thing that would change is maybe how much you use but that can be easily figured out. also, use both lemon and lime if you are feeling extra adventurous.

Ingredients you will need to make lime frosted coconut squares.

  • butter – you can use any plant based butter alternative that you like to use also.
  • brown sugar
  • egg
  • vanilla
  • coconut extract
  • flour
  • baking powder
  • salt – always add salt to bring out the flavors in any dish
  • shredded unsweetened coconut
  • white chocolate

Lime Frosting

  • butter- use what you like as a butter or a plant based butter alternative
  • one lime
  • icing sugar
  • heavy cream – you can also use milk if you like
  • white chocolate chips for melting

How to make lime frosted coconut squares

1. Pre heat, and prepare the pan

pre heat oven to 350°f

line and 8×8 baking pan with parchment paper on all sides and set aside.

2. Start with the wet ingredients

cream together butter and brown sugar until everything is smooth

Add egg, vanilla and coconut extract. mix it all together until everything is well combined.

3. Add the dry ingredients

Add flour, baking powder and salt. mix together only until it is combined. do not over-mix.

4. Fold in the cheese … sorry I mean coconut and chocolate chips.

5. Spread into the pan

spread into he bottom of the baking pan as evenly as possible.

6. Bake

bake 15 – 20 min until the middle is no longer shiny ad the edges are a light-kissed golden brown.

allow cooling completely before frosting.

7. Make your frosting.

in a large bowl add the butter softened to room temperature. Zest one clean lime into the bowl then cut and squeeze the juice out of the lime.

cram together a bit (will not mix together easily, that’s ok)

8. Add the dry ingredients

add the icing sugar and heavy cream, and beat in a stand mixer with the whisk attachment or using a hand mixer beat the frosting until light and fluffy.

9. Adjust the texture to what you like best

if the frosting is too runny add more confectioner sugar, if it is too thick add some heavy cream (a very tiny bit at a time)

10. Frost

once the squares are cooled fully, frost the top as evenly as possible. sprinkle with a bit of coconut.

11. Drizzle with some white chocolate

melting white chocolate is easy to burn, microwave for 30 seconds at a time and stir in between until it is melted just enough to run off the spoon.

spoon chocolate into a small sandwich bag cut a tiny bit off the end and squeeze and drizzle the chocolate onto the squares.

12. Serve (or find a good hiding place for them, your call)

you can cut into the immediately or let the chocolate and icing firm up in the fridge for about 30 min.

Notes

if you are looking for green icing you can use some green and yellow food colouring to achieve a more lime colour. I personally like that natural white with the lime zest for colour.
