Easter Chip Cookies

These soft, chewy and delicious cookies offer the best of easter all in one cookie. The added brown sugar gives you a chew like no other and the colorful eggs add the pop of color we all know and love about this holiday.

Easter Chip Cookies

I love easter, its a great time to spend with family. the kids get to wake up to see if the easter bunny has arrived and after a morning of hunting eggs all over the home we get to sit down to breakfast and later have a great dinner with friends and family.

chilling these cookies in the fridge for at least 1 hour is very important. I personally get very impatient when it comes to these types of instructions so I get it. we just want the cookies now right? same! but trust me. if you wait you will not be disappointed!

Ingredients you will need

  • Unsalted Butter– This will make sure your cookies are filled with flavor and great texture.
  • Brown Sugar- using all brown sugar in this recipe gives the cookie its soft and chewy texture.
  • Eggs- Binds the mixture together.
  • Vanilla
  • All purpose flour
  • Baking Soda
  • Salt- brings out the flavor of the cookie.
  • Semi-sweet Chocolate chips- my preferred chip
  • Salted dark Chocolate Bar– added dark chocolate and salt helps to cut through the sweetness from the easter candy.
  • Easter Egg Candy– your favorite easter egg candy

How to Make Easter Chip Cookies

  1. Cream together butter and brown sugar.
  2. Add egg and vanilla and beat until smooth.
  3. in a separate bowl whisk together 2 cups all purpose flour, baking soda and salt until fully combined.
  4. gradually beat into wet ingredients until you can no longer see any dry ingredients, you may need to scrape down the sides of the bowl if using and electric stand mixer.
  5. rough chop chocolate bar into small uneven chunks, no need to be perfect here.
  6. rough chop easter egg candy in half. They will fly everywhere, be ready to catch.
  7. fold in chocolate chips, chocolate bar and candy.
  8. chill in fridge for 1 hour or ever night.
  9. scoop into 2 tablespoon sized balls and drop onto lined cookie sheet with room to spread. these are big cookies, on my large cookie sheet I did 6 cookies at a time.
  10. Bake on middle rack of the oven pre heated to 375 degrees f for 10-12 min or until golden brown on the edges.
  11. allow to cool for 5 min on cookie sheet then transfer to wire rack to cool completely.

Equipment

  • 1 Stand mixer optional
  • 1 measuring cups
  • 1 measuring spoons
  • 1 cookie sheet
  • 1 parchment paper
  • 1 wire rack

Ingredients
  

  • 1 cup Unsalted Butter
  • 1.5 cup Brown Sugar
  • 2 each eggs
  • 1.5 tsp Vanilla
  • 2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Kosher Salt
  • 1 cup Semi-sweet Chocolate chips
  • 1 each Dark Chocolate bar
  • 1 cup Easter egg candy
  • Extra eggs for decoration

Instructions
 

  • Cream together butter and brown sugar.
  • Beat in egg and vanilla.
  • In seperate bowl whisk together flour, baking soda and salt.
  • slowly incoporate wet and dry ingredients. mix well until fully combined.
  • Rough chop candy eggs and choclate bar and add to bowl.
  • Add choclate chips and stir making sure to evenly ditribute ingredients throughout the dough.
  • Chill dough in fridge for 1 hour or overnight. do not skip this part.
  • Pre-heat oven to 375 degrees f
  • Scoop dough into 2 tbsp sized balls and place on lined cookie sheet about 2 inches apart. These cookies spread a lot.
  • Place 3 full eggs on top of each cookie.
  • Bake on middle rach for 10-12 min or until golden brown.
  • Remove from oven and allow to rest for 5 min before transfering to cooling rack to cool completely.

Notes

Chilling the dough may seem like a long time to wait especially since these are so delicious. but it is incredibly important and needs to be done or you will end up with very flat very dark cookies.
Salted dark chocolate bar is optional, for me it was the right thing to add to cut through the sweetness the easter candy eggs offer.
