Summer is a time to get together with friends and family. these ice cream squares are what you should be bringing the next time you see everyone. they are so easy to make and so delicious everyone will be asking for the recipe
my grandma made these for just about every event we had during the summer. it quickly became her signature dish. I’m so glad that I have her recipe book and even more I have it in her own handwriting. it feels like the best connection to her I have.
The flavors of coconut and butterscotch in these ice cream squares are so great. summer is the best time of year and these are the squares you need.
Ingredients you will need
- ½ cup melted butter
- 1 cup brown sugar
- 1 cup coconut
- 3 cup special k cereal
- 2 liters butterscotch ice cream
How to make Ice Cream Squares
- add butter to a pot and melt over medium heat. add sugar and stir until fully dissolved.
- remove from heat, and add cereal and coconut. stir until everything is coated.
- prepare a 9×5 baking dish with a light coat of cooking spray or oil.
- spread ⅔ of the cereal into the bottom of the pan in an even layer.
- open the ice cream box and slice into 1″ slices, arrange slices in a pan to cover the bottom layer. with the back of a spoon squish and mold the ice cream without losing too much of the swirl. creating the second layer
- sprinkle the remaining cereal mixture on top of the ice cream, and press down lightly with the back of a spoon.
- cover and place into the freezer until ready to serve. at least 1 hour
