These cookie butter oatmeal cookies are chewy on the inside and crispy on the outside. They are full of stroopwafel flavor and so very addicting. I had to ask my husband to take them to work and share them with his co-workers. If he didn’t I would finish the whole batch myself.
I searched the internet high and low looking for a recipe to use the cookie butter I purchased out of pure curiosity. I had a hard time finding one that didn’t involve elaborate plans and techniques.
these cookies are just as easy to make as any other drop cookie. They taste so delicious you will have people wondering if they were made by a professional.
I baked my first batch for 10 minutes and they turned out good except they did get pretty crispy when they cooled completely. 8 minutes for my oven seemed to be the right amount of time. they baked fully leaving a chewy center and slightly crisp on the edges.
Ingredients you will need
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 cup cookie butter
- 3 cup flour
- ½ tsp salt
- 2 tsp baking soda
- 1 cup rolled oats
How to make Cookie Butter Oatmeal Cookies
- pre heat oven to 350°f
- add softened butter, sugar, and brown sugar to the bowl of a stand mixer. cream together until light and fluffy
- add eggs and cookie butter and continue beating the mixture until it is all combined. do not over-mix as it will start to separate the oils.
- add flour, salt, baking soda, and rolled oats. continue beating until everything is incorporated.
- using a cookie scoop spoon 12 cookies evenly spaced on a large cookie sheet prepared with parchment paper or a silicone mat.
- place on the middle rack of the oven and bake for 8-10 minutes. or until the edges are slightly golden brown.
- allow cookies to settle on cookie sheet for 5 minutes then transfer to a cooling rack to cool completely.
- store in an air-tight container
