Lemon Parmesan Chicken

This lemon parmesan chicken comes out of the oven so delicious and moist. its a super easy way to get dinner on the table with great flavor and minimal effort.

dinner time should be easy. it should be a time to hang out with your family and catch up on the day. a time to relax and defiantly not a time to stress. this is why this lemon parmesan chicken is one of my favorite meals to make.

this recipe can be done without the marinading portion if you don’t have the time. I have done it with only the mayo topping and it turns out just moist and just as delicious. the marinading just gives it that extra dimension of flavor.

Ingredients you will need

  • 4 chicken breasts

Marinade

  • 1 lemon
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup Dijon mustard

Spread

  • ¼ cup mayonnaise
  • 1 tsp paprika
  • 2 tsp Italian seasoning
  • 1 tsp garlic salt
  • 1 tsp parsley
  • salt and pepper to taste
  • 2 tbsp parmesan cheese

How to make Lemon Parmesan Chicken

  1. in a freezer bag squeeze the juice from one lemon, add mustard salt and pepper then place the chicken breasts in the bag. smush everything around the chicken and try to remove as much of the air as possible from the bag before sealing shut.
  2. place the bag in the fridge for 1 hour or over night to marinate
  3. in a small bowl mix together mayonnaise, paprika, Italian seasoning, and garlic salt then set aside.
  4. line a baking sheet with tin foil and pre heat oven to 350°f
  5. remove chicken from bag and place on baking sheet.
  6. season with some salt and pepper
  7. using a small basting brush divide the mayo mixture onto the 4 pieces of chicken and spread evenly over the breast being sure to coat the top and sides of each piece of chicken.
  8. sprinkle parmesan cheese over each piece of chicken.
  9. bake in the oven for 30 min or until fully cooked.
  10. serve on the side of salad or rice and veggies and enjoy!
