This BBQ Chicken Mac n’ Cheese is so easy to make and is definitely a favorite in our family, especially with the kids. with the combination of cheese, bacon, and BBQ chicken, you really can’t go wrong.
When your craving that comfort food you might as well make it good. actually scratch that you better make it great. that what this recipe for BBQ chicken and bacon mac n’ cheese is. no need to order in or buy the box any longer.
Ingredients you will need
- 1 tbsp butter
- 1 tbsp flour
- 1 can evaporated milk
- 1 cup milk
- 1 tsp salt
- 1 cup bacon bits
- 1 tbsp mustard
- 2 tbsp onion flakes
- 2 tsp smoked paprika
- 1 tsp black pepper to taste
- 3 cup shredded sharp cheddar
- 1 cup shredded mozzarella cheese
- 6 cup cooked elbow noodles
topping
- 1 cup panko breadcrumbs
- 2 tsp garlic salt
- salt and pepper to taste
- 2 tsp parsley flakes
- 2 tsp dried chives
- ¼ cup parmesan cheese
BBQ Chicken
- 6 boneless skinless chicken thighs
- salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- your favorite BBQ sauce I like Liquid Gold BBQ Sauce
How to make BBQ Chicken Mac n’ Cheese
- pre heat oven to 350°f
- Shred cheese and mix together setting 1 cup worth aside for assembly. Have all seasonings on hand as you will need to keep a close eye on the sauce once you have started.
- In a large saucepan melt butter with flour and stir continuously until flour begins to darken. add evaporated milk and milk and stir constantly until you see that the mixture begins to thicken. moving the spoon through the milk you should start to see waves forming.
- add bacon bits, onion flakes salt, pepper, and mustard mix in completely.
- add in cheese and stir just until cheese has melted, add remaining seasonings, stir to incorporate, and take off the heat.
- add cooked noodles to the cheese sauce and stir until every noodle is drenched in delicious cheese sauce.
- prepare a 9×13 baking with cooking spray
- pour half of the noodle mixture to layer the bottom of the pan, layer remaining cheese on that and add the rest of the noodles on top.
- combine all ingredients for topping and sprinkle on top. bake in the oven for 30 min or until the top is golden brown and the sauce is nice and bubbly.
BBQ Chicken
- combine all seasoning and rub onto all sides of each chicken thigh
- BBQ until fully cooked and apply the BBQ sauce to both sides with a brush that is BBQ safe. cook the chicken on each side to caramelize Sauce a bit then remove from heat and allow to rest.
- cut chicken into bite-sized pieces and place on top of a bowl of the mac n’ cheese.
*Notes
I use evaporated milk but you can use all milk if that is what you prefer.
Always remember that cooking is to your taste if you don’t like a certain ingredient you can remove it. seasoning should always be to-taste and measured with your heart. this is merely a guideline.
