When you regular breakfast just isn’t getting the job done anymore and you looking for something to give you a quick fix in the morning breakfast burritos are exactly what you need.

best part is the recipe makes 4 burritos and if you only need 1 in the morning the rest keeps well for up to 5 days in the fridge. so you can have a good breakfast easy to make every day. My husband was on holidays this week so unfortunately I had to share.

I never use to be someone who enjoys spice on my eggs until recently. I had no Idea what kind of flavors I was missing out on. Of course if you don’t like spice you don’t have to add the siracha, and if you like more spice some chili flakes or jalapeños cooked with the bell pepper would be amazing!

my favorite part about cooking at home is that it is completely customizable to your particular tastes and you don’t have to feel awkward asking the employee at your drive-through for extra “this”, and less “that”.

Ingredients you will need

  • 1 lb. sausage meat
  • 6 eggs
  • 3 tbsp milk
  • salt and pepper to taste
  • garlic powder to taste
  • 2 hand fills cooking spinach
  • ¼ bell pepper
  • 1 tbsp butter
  • 4 large tortillas
  • few cheese slices
  • sriracha sauce for toping

How to Make Breakfast Burritos

  1. cook sausage meat in a large frying pan over medium heat until fully cooked breaking it up so it doesn’t cook into 1 large patty. remove from heat and set aside.
  2. dice bell pepper
  3. add butter to the frying pan and allow to melt before adding the pepper and the spinach. cook while moving around consistently until spinach has cooked down and has reduced significantly in size.
  4. whisk eggs and milk in a bowl then pour over peppers and spinach. season with salt pepper and garlic. and continue cooking and scrambling until fully cooked. remove from heat. for extra heat, you could add some jalapeno peppers or chili flakes at this stage.
  5. on a flour tortilla add some of the sausage and some of the eggs. add a few slices of cheese and top with siracha sauce.
  6. start by folding in the two sides of the tortilla then fold the closest edge to you forward to meet with the opposite side, pull back to create a roll, tuck in the edges, and roll tight. (I hope that makes sense)

Have some fun with it and try different ingredients. add onions and peppers, maybe some jalapenos or chili flakes. make your breakfast your way.
