Cookies are always a comfort item for me, these brown sugar oatmeal cookies are added to my list of all time favorite cookie list.
because these cookies use melted butter the prep time is less than if you had to wait for butter to soften. Also using only brown sugar as the sweetening agent in these cookies you end up with a deliciously rich molasse flavor that cant be beat.
Ingredients you will need to make brown sugar oatmeal cookies
- Butter
- Brown sugar – the darked brown sugar you use the richer the molasses flavor will be.
- Almond extract- you can use vanilla if that is all you have, I suggest adding 2 tsp instead if you choose to go that way.
- Eggs
- Flour
- Salt- using table salt is ok, however I like to use kosher salt so I can taste the little buts in the cookie
- Baking soda
- Rolled oats
- (optional) chopped nuts or chocolate chips
How to make brown sugar oatmeal cookies
1. Pre heat
pre heat oven to 350℉
2. Mix your wet ingredients
in a large bowl melt butter in microwave just till soft but not boiling
add brown sugar, almond extract and eggs
whisk util fully combined
3. Add your dry ingredients
add flour, salt and baking soda then mix with a wooden spoon until combined and no dry flour is visible.
add rolled oats and fold in until they are all combined
4. Bake
line a baking sheet with parchment paper or a silicone baking mat
spoon 1.5 tablespoons of cookie dough balls and add them to the cookie sheet evenly, leaving about 2 inches for spreading.
baking in pre heated oven for 10- 12 minutes until slightly golden brown.
5. Cool
allow cooling on the cookie sheet for 2 minutes before transferring to a cooling rack to cool completely.
