Have you ever been snacking on a bag of trail mix and wondered what that would taste like in a cookie? Oh, just me? well, now you don’t have to because I have made these coastal berry cookies for us.

Coastal Berry Cookies

This coastal berry trail mix was picked up on my last Costco run as an attempt to have healthy snacks in the house. So naturally I put it in a cookie.

Coastal Berry Trail Mix for Coastal Berry Cookies

I’m so glad that I did this cookie is sweet and salty, with a chewy texture from the cranberries and blueberries, as well as a crunch from the nuts. it is everything you need in a cookie.

Ingredients you will need

  • Butter – adds amazing flavor to the recipe
  • Granulated sugar
  • Brown sugar
  • Egg – binds the ingredients together
  • Milk
  • Vanilla- adds a warm flavor to the cookie.
  • All purpose flour
  • Rolled oats – creates a great base to properly hold the trail mix pieces.
  • Cinnamon
  • Salt
  • Baking powder
  • Baking soda
  • Coastal Berry Trail mix – combination of cranberries, blueberries, cashews, almonds, yogurt chips.

How to make Coastal Berry Cookies

  1. pre heat oven to 350° f
  2. in a medium bowl cream together butter, brown sugar and granulated sugar.
  3. add egg, milk, and vanilla. combine fully using hand mixer.
  4. add flour, oats, cinnamon, baking soda, baking powder, and salt. using a wooden spoon fold wet and dry ingredients together.
  5. taking 1 cup of the Coastal Berry trail mix separate out the almonds and cashews, from the rest of the mix and roughly chop them.
  6. add trail mix to cookie dough and fold in until it has been well distributed throughout.
  7. spoon drop 1 tbsp of dough onto a cookie sheet spaced about 2 inches apart
  8. bake in the oven for 10-12 min or until lightly golden browned.
  9. cool on the cookie sheet for 5 minutes before transferring it to a cooling rack to cool completely.
