Making these coconut vanilla popsicles is so easy it only takes 2 ingredients and a bit of time and you have a perfect dairy-free popsicle ready for the next hot summer day.

this summer has been so hot that my desire to bake or even cook has gone right out the air conditioner-filled window. But that doesn’t mean my sweet tooth has gone with it.

in a sea of ice cream and dairy-filled cold treats my rumbling tummy sometimes craves a dairy-free alternative that is just as sweet and even more delicious than the alternative.

you will love these treats so much the coconut milk ads and extra dimension of flavor and creaminess.

freezers can vary for freezing time so make sure you test the popsicles carefully so you don’t make a huge mess with a popsicle that hasn’t frozen yet. make ahead and leave overnight to be sure it has frozen all the way through.

Ingredients you will need

  • 1 pkg instant vanilla pudding mix
  • 1 400 ml can coconut milk

How to make Coconut Vanilla Popsicles

  1. mix 1 400 ml can of coconut milk into 1 package of instant vanilla pudding mix.
  2. stir until there are no lumps and the mixture is nice and smooth.
  3. pour into popsicle mold and place in freezer. for min 1 hour or overnight until fully frozen solid.
  4. remove from the freezer and run under a bit of warm water until the popsicle is released from the mold

  • 1 popsicle mold
