How to make French Onion Smothered Pork Chops
1. Chop Onions
Peel onions and cut in half, slice into thin slices. Cut the top of the onion off to create a flat area then slice down the middle through the roots. Peel the thin layer off the outside of the onion then slice as thinly as possible horizontal to the root.
2. Cook the Onions down
Sauté onions for 4-5 minutes until they have softened slightly. Add 4 tablespoons of beef broth. season the onions with salt and pepper if desired.
3. Fry the pork
Season pork chops with salt, pepper, and thyme.
Remove onions from the pot and add set them aside. Add seasoned pork chops to the frying pan cooking on either side for 2-3 minutes to brown both sides. You should hear a slight simmer when the pork hits the pan, if it’s too loud turn the heat down. Remove and set aside in a bowl or plate that won’t spill the juices from the pork chops. Do not throw away the juice you can pour it over the chops when you bake them.
5. Cook the onions
Add onions back into the pan then cook for another 10-12 minutes until onions have become transparent and very soft. They may even have browned a little. Stir occasionally but let them rest as much as possible to allow even cooking.
6. Simmer
Sprinkle the flour over the onions and season with salt and pepper. Cook for a few minutes until the flour is no longer visible.
add remaining beef broth and simmer for a few minutes. You can use beef stock for a stronger taste, I used beef broth so the pork chops took center stage in flavor.
7. Bake
Pre heat oven to 400°f
Pour onion mixture into an 8×9 baking pan. Add pork chops on top and spoon a bit of juice on top of the chops. add sliced mozzarella cheese. You can also use swiss or any other melting cheese you have on hand.
Bake for 8-10 minutes until the onion base is bubbly and the cheese is melted and a bit browned.
