Fresh Made Lasagna Noodles

Making noodles from scratch is actually a lot easier than you would think. These fresh made lasagna noodles bring your every day lasagna recipe to higher levels.

Next time you make any kind of pasta at home be sure to try to make them yourself. Making the noodles this way instead of using the box kind Made for a very sturdy slice when cutting into the pan.

Ingredients you will need

  • All purpose flour – from what I understand this isn’t the ideal flour for pasta but since it is the flour most of us have on hand I used it so that it would be easily done any time.
  • eggs – good fresh eggs are always best.

How to make fresh made lasagna noodles

1. Measure out your flour

Measure out flour onto a clean dry surface in a pile. you want to start with the right amount of flour but always have some on hand incase your dough is sticky. Also will need some extra for when you are rolling it out.

2.Add eggs

create a well at the top of the flour mountain big enough for the eggs. Make this well a bit bigger than you may think you need it to be.

Crack 4 of the 5 eggs into the well. I like to crack my eggs into a bowl then pour them into the flour well from the bowl. It helps me make sure I have no shells that slipped by and end up in my pasta.

3.Mix

begin to slowly break the yolks and mix them into the flour, if the dough is not coming together after a lot of effort add the 5th egg (this will be super messy). You can start with a fork and whisk the eggs on top of the flour allowing some of the flour to slowly incorporate into the eggs. Make the eggs slightly less runny and hopefully, they wont run away from you.

4. Kneed

Dough should be dry not sticky. If your dough is not forming together properly you can add in the 5th egg, alternatively if your dough is too sticky add a bit of flour to your counter top and kneed it into the dough.

5. Rest

Tightly wrap in plastic wrap and set aside to rest for 30 minutes. the dough will develop a crust quickly so make sure when you wrap it there are no holes or crack for the air to reach the dough at all.

6. Divide

Divide dough into 3 equal pieces. For the purposes of this recipe I used it to make home made Lasagna. I wanted 3 layers of pasta so I divided the pasta dough into 3 equal pieces.

7. Roll

Roll out as thin as possible if you find it hard to do roll let it rest for a minute then start again. The dough tends to stiffen up the more you work with it so if you find it’s not getting as thin as you would like it to, step back for a minute and let it rest then come back to it. It should relax a bit and you will be able to roll it out nice and thin.

Using a pasta rolling will make this step a lot easier.

the work can be done with a rolling pin just be prepared to work for it. Get the pasta really thin. The thinner the better.

8. Cut

Cut to the size of the lasagna pan and layer in your ingredients. Lay the pan you are using to make the lasagna on top of the rolled-out pasta and cut around it for the perfect size.
