Christmas time is always a time for ginger bread cookies and houses. Both of the options while completely delicious can be more complicated than you may like when you are just simply seeking a delicious ginger molasses cookie.

Ingredients you will need for ginger molasses cookies

  • Brown sugar – added to help sweeten the cookie and give the inside a great chewy texture.
  • Softened butter – bring butter to room temperature about 30 minutes before making the cookie dough
  • Molasses – adds a rich backdrop to the cookies to help the spices shine. Do not use blackstrap molasses but you can use any other kind you like.
  • Egg – to bind all the ingredients together
  • Flour – use all purpose flour for these cookies
  • Baking soda – helps the cookies rise and level
  • Ginger – the main flavor added to the cookie for a warm slightly spicy favor.
  • Cinnamon – used in combination to create that Christmas home flavor
  • Salt – added to bring out the flavor of the remaining ingredients.
  • Nutmeg – another great addition to the other seasonings to create that warm Christmas flavor.
  • Granulated sugar – to roll the cookie dough in and create an outer crust

How to make Ginger Molasses Cookies

1. Preheat oven

preheat oven 375° f

2. Cream together

in a large bowl cream together butter and brown sugar until all combined, add egg and mix in.

3. Mix dry ingredients

in a separate bowl add dry ingredients, flour, baking soda, ginger, cinnamon, salt and nutmeg, whisk all together

4. Combine it all together

add wet ingredients to dry ingredients and combine with a folding motion until everything is fully combined.

5. Scoop Cookies

using a 1.5 tbsp sized cookie scoop dough into balls, roll it in your hand quickly not handling it too much into a ball then roll the ball in granulated sugar

6. Flatten slightly

place cookies on a lined cookie sheet with enough space to spread slightly. press down using the back of a measuring cup or the bottom of a very flat glass.

7. Bake

bake in oven for 10- 12 minutes being careful not to over bake

8. Cool

allow cooling slightly on the cookie sheet for 5 min before transferring to a cooling rack to cool completely.
