Gumdrop Cookies

These gumdrop cookies were one of grandmas favorite cookie to make and have on hand. If it wasn’t her peanut butter cookies, it was these that were filling her cookie jar.

These cookies are sweet and crisp with a rolled oat base. The chewy gumdrops ad a great texture to chew through and brig that classic oatmeal cookie to a whole new level.

Ingredients you will need

  • Butter – you can also use shortening or margarine.
  • Granulated sugar
  • Brown sugar
  • Eggs
  • Flour
  • Baking powder
  • Baking soda
  • Salt
  • Vanilla
  • Rolled oats
  • Gumdrops – classic gumdrops are a must. if you use any other kind of gummy or candy they might melt too much a create a whole different texture.

How to make Gumdrop Cookies

  1. pre heat oven to 350℉
  2. In a large bowl cram together butter, sugar and brown sugar, using a stand mixer will make this step a lot easier but you can also do this by hand or use a hand mixer.
  3. add eggs and vanilla and mix until fully combined.
  4. in a separate bowl whisk together flour, rolled oats, baking soda, baking powder, and salt.
  5. combine wet and dry ingredients, and stir together until you no longer see any dry ingredients
  6. fold in gum drops.
  7. line a baking sheet with parchment paper or a silicone baking mat. use a 1.5 tbsp cookie scoop to drop cooking on a prepared baking tray leaving 2 inches of space for spreading.
  8. bake 10-12 min or until edges are golden brown
  9. cool on a cooling rack

  • 1 cup gumdrops

Instructions

  • fold in gum drops.
  • line a baking sheet with parchment paper or a silicone baking mat. use a 1.5 tbsp cookie scoop to drop cooking on a prepared baking tray leaving 2 inches of space for spreading.
  • bake 10-12 min or until edges are golden brown
  • cool on a cooling rack

Notes

if you are using parchment paper for baking your cookies will spread more than if you were to use a silicone mat.
