This time of year with the weather turning colder we are all looking for that warm and cozy meal to fill us up and warm us up from the inside. This Hobo Stew is exactly what you need.
this stew has all the same flavors as your traditional stew for a fraction of the price. We all know how steep those grocery bills are becoming so make this the next time you are craving some warm comfort food but not that price tag of stewing beef.
Make some homemade bread to go on the side to step it up a notch.
Ingredients you will need
- Butternut squash- Use what you have, if you have turnip, or a different kind of squash use that.
- Carrots- peeled and cubed
- Onion – use a white cooking onion or Spanish onion
- White potatoes – a cost effective way to fill your stomach up
- Minced garlic – I use the kind that is already minced and in the jar but of course you can use fresh or even dried.
- Beef broth – use beef oxo cubes or packages or use canned. you can also use mushroom for a different flavor.
- Kosher salt
- Black pepper
- Bay leaves
- Paprika
- Basil leaves
- Parsley flakes
- Chili powder
- Rosemary
- Thyme leaves
How to make hobo stew
1. prepare vegetables
peel and dice one onion into ½ inch cubed pieces
peel and dice 3 large carrots into ½inch cubed pieces
wash and dice potatoes into small ½inch pieces (peel if desired)
peel then cut in half then, scoop the seeds from the inside of a small butternut squash, and dice into small ½-inch cubed pieces.
2. Cook beef
in a large deep pan over medium heat brown 1 lb of ground beef, add onions and season with salt pepper and garlic, then cook until the onions appear translucent.
3. fry the vegetables
remove meat and onions from the pan and set aside in a bowl then add the carrots and squash. cover and let cook for a few minutes then remove the lid and stir, keep doing that until you see the outside of the vegetables begin to brown and they should soften as they cook.
add the ground beef back into the pan as well as the beef broth. and potatoes
4. add seasoning
add all the seasonings listed and the bay leaves. bring liquid up to a boil.
5. simmer
close the lid and reduce heat to simmer for 10 minutes or until the potatoes are cooked fully. and liquids have reduced a bit.
6. enjoy
eat the hobo stew right away or cool completely to store in an air tight container in the fridge.
