Coming up with a side dish to compliment our main protein with any dinner can be difficult. Making something that is fun and interesting is especially hard. Next time you are in charge of making dinner add these honey balsamic roasted carrots to your menu and watch as this really simple and easy dish to create becomes the star of the plate.

Honey Balsamic Roasted Carrots

These carrots are so good. We had them recently alongside our turkey dinner as a new side dish to add to the table. I loved them so much I have added them to the weekly dinner menu in our home.

Ingredients you will need to make honey balsamic roasted carrots

  • Large carrots
  • Vegetable oil – avocado or olive oil can work also
  • Balsamic vinegar
  • Honey – try to use a locally sourced honey for some extra health benefits. The grocery store stuff works also and has no shame. That’s what i used and it was delicious
  • Garlic – fresh or died
  • Thyme leaves- dried works best because they doesn’t burn as easily
  • Salt
  • Black pepper
  • Fetta cheese- this is optional, you can also use a goat cheese or any kind of crumbly cheese you like.

How to make honey balsamic roasted carrots

1. Pre-heat the oven

pre heat oven to 425℉

2. Prepare the carrots

peel and slice carrots into pieces that resemble a french fry and set aside in a large mixing bowl

3. Mix the sauce

in a medium-sized bowl whisk together 1 tbsp of the vinegar and 1 tbsp of honey, and the oil

4. Coat the carrots

pour it over the bowl of carrots and toss until fully coated

add in your minced garlic, thyme, salt and pepper then toss again until everything has been seasoned evenly.

remove the carrots from the bowl and place them on a large baking sheet that has been lined with parchment paper or a silicone baking mat. save any of the liquid that is left in the bowl.

5. Bake

bake in the oven for 20-25 min or until slightly tender

remove them from the oven and brush the carrots with the remaining liquid that was left ion the mixing bowl in the previous step.

bake for another 10-15 min until the carrots start to brown slightly

6. More sauce

mix together the remaining 1 tbsp of balsamic vinegar and honey

7. Remove from oven and garnish

remove the carrots from the oven and place them in the serving bowl

drizzle the honey mixture over the carrots and crumble up some fetta cheese over the hot carrots

8. Serve your honey balsamic roasted carrots

serve immediately
