No Kneed Rustic Bread

this no kneed rustic bread is very easy to make, so delicious and great for when you want that fancy bread flavor without the fancy bread price tag.

if you’re anything like me you have also been looking for ways to minimize your grocery bill. with the price of groceries being what they are these days I am doing what I can to get my family back to the basics of food and learning to be as self-sufficient as possible.

making bread is one of those things I think everyone should know how to do. I made these two loaves of bread when I was really trying to stretch out my grocery budget and stay out of the grocery store until absolutely necessary.

this bread turned out so good it may end up being my new favorite go-to recipe. I can’t wait to tweak it and make it maybe with different flavors and additions.

Ingredients you will need

  • 2 tbsp active dry yeast
  • 6 cup flour more for texture
  • 3 tsp salt
  • 1 tbsp sugar
  • 3 cup warm water

How to make No Kneed Rustic Bread

  1. in the stand mixer bowl, add yeast sugar and 1 cup of water. wait 5 minutes until the yeast starts to bubble and foam up.
  2. add remaining ingredients then start to mix slowly with the dough hook attachment.
  3. mix until everything is combined and starts to come together. the dough should be slightly sticky but not too sticky that it sticks to your hands. add more flour ¼ cup at a time until you have the desired texture.
  4. turn the dough out onto a floured surface and divide it into two loaves.
  5. place in 2 large bowls and cover loosely with plastic wrap or a towel and allow to rise for up to 3 hours. the longer the better but if you only have tome for 1 or 2 hours it should still be ok.
  6. place a pizza steel/stone or a large cookie sheet (upside-down) in the oven and pre heat the over not 450°f
  7. when the dough has fully risen turn out onto a floured surface and without working the dough form into a ball by bringing the outside into the middle from opposite sides and pinching together. 3-4 times
  8. turn over to reveal a smooth side and slice a line or an x on the top using a very sharp knife. repeat with second loaf.
  9. you can put it on a small cookie sheet or use a pizza peel to place the loaf of bread directly on the pizza steel in the pre-heated oven.
  10. bake for 20-25 minutes until the crust is a nice golden brown color.
  11. allow cooling completely before slicing into it and enjoy!

Notes

the texture of the dough can differ depending on the humidity in the air. in the summer when I made these loaves I needed to add about 3/4 of a cup more flour to the mixture whereas in the winter when it is dryer in my home I might not have to add as much. 

making bread is something that comes with practice and understanding of how it was the last time you made it. do not let that deter you though because if I can learn to make bread so can you!
