Onion Bagels

these days we are all trying to save money on the grocery bill, so when you are looking at adding some things to your grocery cart why not add some yeast and flour instead of that package of bagels.

Ingredients you will need

  • Yeast – keep your yeast in the fridge to avoid that “yeasty” smell and flavor. using active dry yeast will make things easy for beginners.
  • Sugar- feeds the yeast, yeast is alive and needs the sugar to work.
  • Warm water- cold water will not allow the yeast to develop. At the same time water that is too hot will burn your yeast, make sure you fall somewhere in between. Warm water to the touch from the tap is perfect.
  • Dried onion flakes – you can use any brand you have, for more onion flavor you can also add onion powder.
  • Flour – using all purpose flour is what I have on hand for all my baking.
  • Kosher salt – added to bring out the flavor of the rest of the ingredients.

How to make onion bagels

1. Activate yest

add yeast, sugar and water to the bowl of your stand mixer and allow to sit for a few minutes until you see the bubbles begin to form. If your water is too hot or too cold bubbles will not form and your bagels won’t rise. Also if your yeast is old it won’t work either. do not add any more ingredients unless you see the yeast begin to foam up. you will just end up wasting your other ingredients.

2. Hydrate onions

add onion flakes and allow them to rehydrate slightly. let sit for only 2-3 minutes. They don’t need to suck up any liquid, just sit for a minute to get a bit softer.

3. Add dry ingredients

add flour and salt, using the dough hook attachment mix everything together until you have a dough that is pulling away from the sides of the bowl.

4. kneed dough

turn the dough out onto a clean dry surface and continue to knead by hand until the dough is firm and smooth. about 5-10 minutes

5. Rise

cover and set in a warm spot for 1 hour to rise. if you have a bread rise setting on your oven that would be ideal. anywhere that isn’t cold is best.

6. Shape the Bagels

divide dough into 8 equal parts using a scale or just eyeball cut in the using the pie cut method.

form into smooth balls then into bagel shapes. carefully stretching into a wider skinnier version of what you are hoping the end result will be.

7. Time to rest

allow to rest for 10 minutes. No need to cover then for this stage.

8. Preheat

preheat oven to 425°f

9. Boil

salt and bring a pot of water to a boil

carefully drop bagels into the water, only place as many as will fit without crowding or touching.

boil for 1.5 minutes (up to 3 minutes for a chewier texture)

10. Bake

on a lined baking pan place boiled bagels then bake for 20 minutes

allow to cool on a cooling rack.
