Pork and Pineapple Tacos

these pork and pineapple tacos are delicious and so extremely easy to make. The sweet and savory combination is exactly what you have been craving.

When I think of summer I think of pineapple. that flavor if it’s in a drink or just a snack will always scream summer to me. these tacos have all the sweet, savory and spicy flavor you could want in a meal.

the best part is its so easy! making these pork and pineapple tacos requires only minimal effort and very little time. if you would prefer to buy your taco shells from the grocery store that is awesome but I do suggest you try my home made tortilla recipe at least once. you may never go back to store bought again.

Ingredients you will need

Pineapple topping

  • 1/2 pineapple
  • 1 tbsp Tajin
  • 2 green onion
  • 1 dash salt
  • ½ lemon juiced

Pork Filling

  • 1 lb ground pork
  • 1 med onion
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tbsp oregano
  • 1 dash salt and pepper
  • ½ cup chicken broth
  • ½ lemon

How to make Pork and Pineapple Tacos

Pineapple Topping

  1. remove the top and peel from the pineapple then dice half the pineapple into small ¼-inch cubes. place in a medium-sized bowl.
  2. chop the green onion very small then add to the bowl along with the remaining ingredients.
  3. cut lemon in half, set half aside for cooking the pork later.
  4. cover and allow to rest, the salt and rest of the ingredients will pull some of the moisture out of the pineapple and give you a nice salsa-like texture.

ground pork

  1. in a large frying pan add ground pork and begin to cook over medium heat. dice an onion and add to the pork while it is cooking.
  2. when the pork is almost done sprinkle with seasoning and add lemon juice from the second half of the lemon used earlier and the chicken broth.
  3. stir it all together and allow to simmer on low heat until juices have slightly thickened.
  4. assemble on a homemade tortilla (recipe available on my page) or store bought.
  5. add pork, then some pineapples, and for extra flavor, top with your favorite hot sauce
