This pumpkin banana bread is delicious! It is moist and has just the right amount of pumpkin flavor to be the perfect start to your fall season baking.
its a good thing this recipe makes two loaves. The first loaf in our house barely made it out of the oven before it was eaten.
This bread has the perfect amount of pumpkin flavor. it doesn’t over power the bread but gives it that fall harvest feel. Also when you bake it your house will smell amazing!
Ingredients you will need
- Bananas ripe- your bananas should be turning brown and even almost black for the perfect sweet banana flavour
- Pumpkin pure
- Vanilla- you can use pure vanilla extract but the budget over here is only used to the imitation stuff
- Eggs
- Vegetable oil- if you prefer to use olive or coconut oil you can swap those out here also
- Brown sugar
- Granulated sugar
- All purpose flour
- Pumpkin pie spice
- Cinnamon
- Baking soda
- Baking powder
- Salt
How to make pumpkin banana bread
1. Pre-heat
pre heat oven to 350℉. if you have a newer oven that has the convection setting i would suggest that you do not use it to make these types of bread. you want the bread to cook from the bottom giving it time to rise before the outside starts to cook.
2. Prepare your pans
prepare 2 loaf pans with parchment paper and set aside
3. Mix you wet ingredients
in a large bowl peel and mash bananas, I like to leave them a bit chunky but you can mash them to your own preference
add pumpkin puree, eggs, vanilla, sugar, brown sugar, and oil and mix until combined
3. Mix your dry ingredients
set that aside and in a separate bowl combine your remaining ingredients, the flour, baking soda, salt, pumpkin pie spice and cinnamon. you want to make sure that everything is well combined separately before adding it all together limiting the time it takes to combine all the ingredients together.
4. Combine the wet and dry
add the wet ingredients to the dry ingredients and mix. Use a wooden spoon and fold all the ingredients together only until everything is combined. do not over mix. while you are mixing everything together you only want to do it just enough so that you no longer will see and dry ingredients left in the bowl. if you over mix you will end up with a stiffer bread.
5. bake your pumpkin banana bread
divide the batter into the prepared pans and run a clean knife down the middle of each to create a line where the bread should split while baking
place the loaves on the middle rack of the oven and bake for 50-65 min or until a knife or fork comes out clean
