some people like to do a simmer pot on the stove. in a large pot fill with water and add your ingredients. you leave it on a low simmer (hence the name simmer pot) for as long as you wish.

The problem for me on this one is that I have the memory of a goldfish with extreme brain damage. I would forget about the pot and leave it on for too long. Burn the pot, the stove and maybe even the kitchen.

so I have found that the best way to do this is with my tiny slow cooker. I was thrift shopping recently and found a tiny slow cooker. It does not cook anything. It doesn’t have any settings or buttons it is just there to be a warmer for gravies and sauces.

The mini cooker is on when plugged in and off when un plugged. Keeping things simple for a fish like me.

so I add fewer ingredients than you might if you were using a large pot. I fill it with water and place the lid on top. Placing the lid slightly rescue helps some of the scent escape without the water boiling out too fast.
