On a clean dry surface measure out your four and form a hill on your counter top
using the back of the measuring cup or your hands crate a well in the pile big enough to hold all 5 eggs
crack eggs one at a time into a separate bowl then add into the well.
using a fork break all the egg yolks
begin whisking the eggs being careful not to break through the flour walls.
continue to mix the eggs slowly incorporating the flour until it begins to make a past and will no longer run all over the counter if you wee to break through the walls
use a bread scrapper to bring the flour from the outside to cover the egg mixture and use a chopping action to combine slightly
continue all the was around
use your hands to start bringing everything together, the dough will start off crumbly and dry but keep kneading and it will all come together
kneed until everything is combined and the ball of dough is smooth
wrap tightly with plastic wrap and let sit for 30 min
