add pork and beef to a large mixing bowl along with all remaining ingredients except for the cheese.
get your clean hands in there and squish and mix all the ingredients together until it is all 1 cohesive mixture.
divide the patty mix into 8 equal amounts and begin by forming them into balls.
take 1 piece of cheese and press it into the middle of the patty. bring the meat around the cheese making sure it is not visible anywhere through the meat patty and flatten into a burger shape.
chill patties in the fridge for at least 1 hour before cooking on the BBQ. you will have some cheese leak out so try not to flip your burgers too much while cooking. grilling on a Blackstone is also a good method of cooking.
place burgers on a bun (homemade is always best) and top with desired toppings.
