Chicken Parmesan

Equipment

  • 1 meat tenderizer
  • 3 shallow bowls
  • 1 12x9 baking dish
  • 1 frying pan

Ingredients
  

  • 3 chicken breasts
  • cup panko bread crumbs
  • 1 cup flour
  • 2 large eggs
  • ½ cup parmesan cheese
  • ½ cup mozzarella cheese
  • 1 jar pasta sauce your favorite
  • 3 servings spaghetti pasta
  • 3 tsp parsley flakes
  • 3 tsp smoked paprika
  • 4 tsp garlic powder
  • 2 tsp black ground pepper
  • 3 tsp kosher salt
  • 3 tsp Italian seasoning
  • 1-2 cup cooking oil

Instructions
 

  • Pre heat oven to 350°f
  • flatten chicken breast using a meat tenderizer or rolling pin, and use a layer of plastic wrap on top to prevent the chicken from splattering everywhere.
  • set aside chicken breast on a plate while you prepare the breaded coating.
  • in a shallow bowl add flour along with 1 tsp of all the seasonings parsley, smoked paprika, garlic powder, Italian seasoning, sand and pepper. mix with a fork and set aside.
  • in another shallow bowl add eggs and 1 tsp of each of the seasonings in previous step.
  • in the thirst shallow bowl add panko bread crumbs, parmesan cheese and the remaining amount of seasonings.
  • in a large frying pan heat the cooking oil over medium heat.
  • season both sides of your chicken breasts with salt and pepper.
  • using a fork pick up the first chicken breast and place it in the bowl with the flour mixture, coating both sides in flour.
  • remove the chicken breast from the flour bowl and place it into the bowl with the egg mixture coating both sides in the eggs.
  • remove the chicken breast from the egg mixture and place it into the bowl with the panko mixture coating both sides of the chicken.
  • take that chicken breast out of the panko mixture and carefully place it into the pan with the hot oil, oil should simmer when the chicken hits the pan but not explode.
  • cook chicken on both sides until light golden brown. chicken does not need to be fully cooked at this point
  • place chicken on a plate or drying rack while you repeat the previous steps with remaining chicken breasts.
  • prepare a baking tray by adding a layer of your favorite pasta sauce to the bottom.
  • place fried chicken breast on top of the sauce layer.
  • add a bit more pasta sauce to the top of the chicken. leave some of the edges of each piece of chicken exposed to maintain that crispy flavor.
  • add slices of mozzarella cheese to the top of each chicken breast and sprinkle with some parmesan cheese.
  • bake in pre heated oven for 20 minutes until chicken is fully cooked and cheese is brown and bubbly on top.
  • while chicken is cooking boil pasta in salted water till cooked as desired then drain water.
  • serve by placing a serving amount of pasta on your dish the lay a chicken breast on top with sauce from the pan.
