pre heat oven to 350°f
add softened butter, sugar, and brown sugar to the bowl of a stand mixer. cream together until light and fluffy
add eggs and cookie butter and continue beating the mixture until it is all combined. do not over-mix as it will start to separate the oils.
add flour, salt, baking soda, and rolled oats. continue beating until everything is incorporated.
using a cookie scoop spoon 12 cookies evenly spaced on a large cookie sheet prepared with parchment paper or a silicone mat.
place on the middle rack of the oven and bake for 8-10 minutes. or until the edges are slightly golden brown.
allow cookies to settle on cookie sheet for 5 minutes then transfer to a cooling rack to cool completely.
store in an air-tight container.
