Cookie Butter Oatmeal Cookies

chewy inside and crispy edges filled with amazing stroopwafel flavor

Ingredients
  

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup cookie butter
  • 3 cup flour
  • ½ tsp salt
  • 2 tsp baking soda
  • 1 cup rolled oats

Instructions
 

  • pre heat oven to 350°f
  • add softened butter, sugar, and brown sugar to the bowl of a stand mixer. cream together until light and fluffy
  • add eggs and cookie butter and continue beating the mixture until it is all combined. do not over-mix as it will start to separate the oils.
  • add flour, salt, baking soda, and rolled oats. continue beating until everything is incorporated.
  • using a cookie scoop spoon 12 cookies evenly spaced on a large cookie sheet prepared with parchment paper or a silicone mat.
  • place on the middle rack of the oven and bake for 8-10 minutes. or until the edges are slightly golden brown.
  • allow cookies to settle on cookie sheet for 5 minutes then transfer to a cooling rack to cool completely.
  • store in an air-tight container.
