Garlic and Herb Roasted Potatoes

Equipment

  • 1 cutting board
  • 1 knife
  • 1 medium sized pot
  • 1 baking sheet pan

Ingredients
  

  • 5-6 large white potatoes
  • 3 tbsp olive oil
  • 1 tbsp minced garlic
  • ½ tbsp parsley
  • ½ tbsp chives
  • 1 tbsp onion powder
  • ½ cup parmesan cheese
  • salt and pepper to taste

Instructions
 

  • pre heat oven to 400°f
  • select 5-6 medium potatoes
    5-6 large white potatoes
  • cut potatoes into 1.5 inch sized pieces
  • rinse potatoes till water runs almost clear then fill with just enough water to cover the potatoes then add a pinch of salt.

  • bring water to a boil over high heat. allow water to boil for only 5 minutes, just enough to soften the edges but not enough to boil the potato all the way through.
  • place potatoes in a large mixing bowl, and add oil, salt, pepper, garlic, onion powder, parsley, chives, and parmesan cheese.
    3 tbsp olive oil, 1 tbsp minced garlic, ½ tbsp parsley, ½ tbsp chives, 1 tbsp onion powder, ½ cup parmesan cheese, salt and pepper
  • spread evenly on a baking sheet lined with parchment paper or a silicone mat.
  • bake in the oven for 10 minutes, toss potatoes around then back in the oven for another 15-20 minutes until edges are golden brown and potatoes are slightly crispy.

Notes

When you are cooking make sure that you measure the seasonings with your heart. I have left measurements for reference but if you want more of one thing and less of another use your own judgement.
