Honey Balsamic Roasted Carrots

a delicious side dish to any meal, sweet and savory and so easy to make

Ingredients
  

  • 5-6 large carrots
  • 1 tbsp vegetable oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic
  • 1 tsp thyme leaves dried
  • pinch salt
  • pinch black pepper
  • ¼ cup fetta cheese

Instructions
 

  • pre heat oven to 425℉
  • peel and slice carrots into pieces that resemble a french fry and set aside in a large mixing bowl
  • in a medium-sized bowl whisk together 1 tbsp of the vinegar and 1 tbsp of honey, and the oil
  • pour it over the bowl of carrots and toss until fully coated
  • add in your minced garlic, thyme, salt and pepper then toss again until everything has been seasoned evenly.
  • remove the carrots from the bowl and place them on a large baking sheet that has been lined with parchment paper or a silicone baking mat. save any of the liquid that is left in the bowl.
  • bake in the oven for 20-25 min or until slightly tender
  • remove them from the oven and brush the carrots with the remaining liquid that was left ion the mixing bowl in the previous step.
  • bake for another 10-15 min until the carrots start to brown slightly
  • mix together the remaining 1 tbsp of balsamic vinegar and honey
  • remove the carrots from the oven and place them in the serving bowl
  • drizzle the honey mixture over the carrots and crumble up some fetta cheese over the hot carrots
  • serve immediately
