Ice Cream Squares

a great summer desert ready for any occasion.

Ingredients
  

  • ½ cup melted butter
  • 1 cup brown sugar
  • 1 cup coconut
  • 3 cup special k cereal
  • 2 litres butterscotch ice cream

Instructions
 

  • add butter to a pot and melt over medium heat. add sugar and stir until fully dissolved.
  • remove from heat, and add cereal and coconut. stir until everything is coated.
  • prepare a 9x5 baking dish with a light coat of cooking spray or oil.
  • spread ⅔ of the cereal into the bottom of the pan in an even layer.
  • open the ice cream box and slice into 1" slices, arrange slices in a pan to cover the bottom layer. with the back of a spoon squish and mold the ice cream without losing too much of the swirl. creating the second layer
  • sprinkle the remaining cereal mixture on top of the ice cream, and press down lightly with the back of a spoon.
  • cover and place into the freezer until ready to serve. at least 1 hour.
