Lime frosted Coconut Squares

the perfect amount of sweet and tanginess you would expect from a lime recipe, with that great flavour and texture of a chewy and delicious coconut base.

Equipment

  • 1 8x8 square baking pan

Ingredients
  

  • ½ cup butter
  • cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • ¼ tsp coconut extract
  • cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup shredded unsweetened coconut
  • cup white chocolate

Lime Frosting

  • ½ cup butter
  • zest of one lime
  • Juice from one lime
  • cup icing sugar
  • 1 tbsp heavy cream
  • 2 tbsp white chocolate chips for melting

Instructions
 

  • pre heat oven to 350°f
  • line and 8x8 baking pan with parchment paper on all sides and set aside.
  • cream together butter and brown sugar until everything is smooth
  • Add egg, vanilla and coconut extract. mix it all together until everything is well combined.
  • Add flour, baking powder and salt. mix together only until it is combined. do not over-mix.
  • fold in coconut and chocolate chips.
  • spread into he bottom of the baking pan as evenly as possible.
  • bake 15 - 20 min until the middle is no longer shiny ad the edges are a light-kissed golden brown.
  • allow cooling completely before frosting.
  • in a large bowl add the butter softened to room temperature. zest one clean lime into the bowl then cut and squeeze the juice out of the lime.
  • cram together a bit (will not mix together easily, that's ok)
  • add the icing sugar and heavy cream, and beat in a stand mixer with the whisk attachment or using a hand mixer beat the frosting until light and fluffy.
  • if the frosting is too runny add more confectioner sugar, if it is too thick add some heavy cream (a very tiny bit at a time)
  • once the squares are cooled fully, frost the top as evenly as possible. sprinkle with a bit of coconut.
  • melting white chocolate is easy to burn, microwave for 30 seconds at a time and stir in between until it is melted just enough to run off the spoon.
  • spoon chocolate into a small sandwich bag cut a tiny bit off the end and squeeze and drizzle the chocolate onto the squares.
  • you can cut into the immediately or let the chocolate and icing firm up in the fridge for about 30 min.
  • cut into 9 equal pieces.

Notes

if you are looking for green icing you can use some green and yellow food colouring to achieve a more lime colour. I personally like that natural white with the lime zest for colour.
