in the stand mixer bowl, add yeast sugar and 1 cup of water. wait 5 minutes until the yeast starts to bubble and foam up.
add remaining ingredients then start to mix slowly with the dough hook attachment.
mix until everything is combined and starts to come together. the dough should be slightly sticky but not too sticky that it sticks to your hands. add more flour ¼ cup at a time until you have the desired texture.
turn the dough out onto a floured surface and divide it into two loaves.
place in 2 large bowls and cover loosely with plastic wrap or a towel and allow to rise for up to 3 hours. the longer the better but if you only have time for 1 or 2 hours it should still be ok.
place a pizza steel/stone or a large cookie sheet (upside-down) in the oven and pre heat the over not 450°f
when the dough has fully risen turn out onto a floured surface and without working the dough form into a ball by bringing the outside into the middle from opposite sides and pinching together. 3-4 times
turn over to reveal a smooth side and slice a line or an x on the top using a very sharp knife. repeat with second loaf.
you can put it on a small cookie sheet or use a pizza peel to place the loaf of bread directly on the pizza steel in the pre-heated oven.
bake for 20-25 minutes until the crust is a nice golden brown color.
allow cooling completely before slicing into it and enjoy!
