Ingredients
  

  • 5-6 boneless and skinless chicken things
  • 3 tbsp olive oil
  • 1 cup washed uncooked rice
  • 1 cup frozen mixed vegetables
  • 2 cup chicken broth
  • ¼ cup lemon juice
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp Italian seasoning

Instructions
 

  • in a small bowl mix together garlic, paprika, salt, cumin, chili powder, and Italian seasoning.

  • in a medium-sized bowl add chicken, 1 tablespoon of olive oil, and half the seasoning mix. Use your hands and rub seasoning mix all over and into every nook and cranny of the chicken thighs.

  • in a deep frying pan over medium heat add 2 tablespoons of olive oil. when the pan is hot add chicken thighs and fry for 2-3 min on either side until browned. then remove from pan and set aside. the chicken will not be fully cooked.

  • turn the heat down slightly and add chicken broth, lemon juice, washed uncooked rice, vegetables, and remaining seasoning. give it a quick stir to make sure all the seasoning is incorporated. Place the chicken back on top.
