add yeast, sugar and water to the bowl of your stand mixer allow to sit for a few minutes util you see the bubbles begin to form.
add onion flakes and allow them to rehydrate slightly. let sit for only 2-3 minutes.
add flour and salt, using the dough hook attachment mix everything together until you have a dough that is pulling away from the sides of the bowl.
turn the dough out onto a clean dry surface and continue to knead by hand until the dough is firm and smooth. about 5-10 minutes
cover and set in a warm spot for 1 hour to rise
divide dough into 8 equal parts using a scale or just eyeball cut in the using the pie cut method.
form into smooth balls then into bagel shapes. carefully stretching into a wider skinnier version of what you are hoping the end result will be.
allow to rest for 10 minutes.
preheat oven to 425°f
salt and bring a pot of water to a boil
carefully drop bagels into the water, only place as many as will fit without crowding or touching.
boil for 1.5 minutes (up to 3 minutes for a chewier texture)
on a lined baking pan place boiled bagels then bake for 20 minutes
allow to cool on a cooling rack.
