remove the top and peel from the pineapple then dice half the pineapple into small ¼-inch cubes. place in a medium-sized bowl.
chop the green onion very small then add to the bowl along with the remaining ingredients.
cut lemon in half, set half aside for cooking the pork later.
cover and allow to rest, the salt and rest of the ingredients will pull some of the moisture out of the pineapple and give you a nice salsa-like texture.
ground pork
in a large frying pan add ground pork and begin to cook over medium heat. dice an onion and add to the pork while it is cooking.
when the pork is almost done sprinkle with seasoning and add lemon juice from the second half of the lemon used earlier and the chicken broth.
stir it all together and allow to simmer on low heat until juices have slightly thickened.
assemble on a homemade tortilla (recipe available on my page) or store bought.
add pork, then some pineapples, and for extra flavor, top with your favorite hot sauce.
