using a sharp knife carefully cut the pork into long about ½-inch thick slices then add them to a bowl.
season with salt and pepper then add the corn starch, mix well so that all the pork is coated with the cornstarch and seasoning. set aside to rest while you prepare the vegetables.
peel and cut the onion into long thin slices, core and slice the pepper the same way, wash and cut the tips off of the beans. set aside.
add olive oil to a large and deep frying pan (you can use a wok if you have one but I do not have one of those yet)
heat pan to medium then add the pork and spread evenly on the bottom of the pan. allow to cook on all sides and become golden. remove cooked pork from the pan and set aside in a bowl.
to the same pan add the vegetables and let them steam and cook. even have them brown a bit for added flavour.
in a mason jar add all ingredients from the sauce and shake well.
continue to cook the vegetables until they have softened, The onions should be clear and the pepper should have some browning on them
add the pork back into the pan and if you are choosing to use bean sprouts add them now.
pour in the sauce and lower the heat to a slow simmer, stirring well to ensure everything is well coated with sauce.
simmer for 5-10 min until the sauce is thick and adhering to the meat and vegetables in the pan.
cook rice, rice noodles or any base of your choice according to your preference or directions on the package.
add rice to your plate and spread evenly to make a nice fluffy bed for your stir fry.
top with meat and vegetables and an extra scoop of that delicious sauce if you like.
sprinkle with sesame seeds and chives if you wish.
