Pumpkin Banana Bread

delicious moist banana bread with the added fall flavour of pumpkin and pumpkin pie spices, perfect for the season

Ingredients
  

  • 3 med bananas ripe
  • 1 cup pumpkin pure
  • 2 tsp vanilla
  • 3 eggs
  • cup vegetable oil
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 3 cup all purpose flour
  • 3 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 tspa baking powder
  • 1 tsp salt

Instructions
 

  • pre heat oven to 350℉
  • prepare 2 loaf pans with parchment paper and set aside
  • in a large bowl peel and mash bananas, I like to leave them a bit chunky but you can mash them to your own preference
  • add pumpkin puree, eggs, vanilla, sugar, brown sugar, and oil and mix until combined
  • set that aside and in a separate bowl combine your remaining ingredients, the flour, baking soda, salt, pumpkin pie spice and cinnamon.
  • add the wet ingredients to the dry ingredients and mix. Use a wooden spoon and fold all the ingredients together only until everything is combined. do not over mix.
  • divide the batter into the prepared pans and run a clean knife down the middle of each to create a line where the bread should split while baking
  • place the loaves on the middle rack of the oven and bake for 50-65 min or until a knife or fork comes out clean
  • allow to cool slightly before slicing into them and enjoy

Notes

if you have a convection oven do not use that setting, you want the heat to come from the bottom of your oven and allow the batter to rise before cooking on the outside.
