Raisin Bran Muffins

A great classic muffin recipe, perfect for a quick breakfast on the go or an afternoon snack

Equipment

  • 1 12 cup muffin pan
  • 12 Muffin liners
  • 1 set measuring spoons
  • 1 set measuring cups
  • 1 Bowl
  • 1 whisk
  • 1 rubber spatula

Ingredients
  

  • 1 cup bran cereal
  • 1 cup milk
  • 6 tbsp vegetable oil
  • 1 large egg
  • 1 tsp vanilla
  • ½ cup sugar
  • cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup raisins

Instructions
 

  • pre heat oven to 350°f
  • In a medium bowl add bran cereal and milk then allow to soak for 10 minutes.
  • add oil, egg, vanilla, and sugar. whisk it all together breaking the egg and fully incorporating all the ingredients.
  • add your dry ingredients, flour, baking soda, baking powder, and salt.
  • mix all the ingredients together but do not over-mix. When everything is combined stop mixing.
  • fold in the raisins
  • Line a muffin tray with 12 paper liners and divide the batter evenly between them.
  • bake for 20 minutes or until a toothpick comes out clean
  • allow to cool
