In a medium-sized bowl add fresh or thawed frozen shrimp that have been peeled and de-veined.
roll lemon on the counter under the pressure of your hand to free up some of the juices. Slice in half then squeeze the juice from half the lemon over the shrimp. add olive oil, salt, pepper, tajin, parsley, chives, garlic salt, and smoked paprika.
stir it all together making sure every piece of shrimp is covered in all the seasoning, cover and let marinate in the fridge till ready to cook. if you have time leave for about 1 hour.
start BBQ on medium heat with a mat designed to allow you to cook shrimp (can also be skewered or done in a frying pan)
cook until shrimp has turned pink and the seasoning has begun to brown. remove from heat.
place coleslaw in a small bowl and toss with dressing.
assemble taco with tortilla, coleslaw, and shrimp. you can top with a bit of lemon juice or hot sauce and enjoy!
